Madeira is a dessert wine from the Portuguese island of the same name. It belongs to the so-called “fortified” wines, which means that alcohol – usually brandy – is added to it during fermentation. This stops the fermentation process, as the yeasts cannot survive at an alcohol content of 16% vol. and more. The result is a wine with a lot of residual sweetness, which can now develop to full maturity in barrels.
These barrels are then filled with SLYRS whisky, which has already undergone four to five years of aging in conventional American white oak barrels. In a good two years of finish, the malt takes on the fruity, light tones of this noble wine, forming a unique symphony of flavors.
